Aloha and Welcome
Welcome to the Department of Human Nutrition, Food & Animal Sciences. HNFAS programs span a wide range of subjects from the basic principles of human nutrition and food chemistry to the development of animal production systems. HNFAS is home to two exciting undergraduate programs: Animal Sciences and Food Science Human Nutrition and four extraordinary graduate programs: Master of Science in Animal Science, Master of Science in Food Science, Master of Science in Nutritional Sciences and our newest, the Interdisciplinary Ph.D. program in Nutrition. If you are looking for exciting, multidisciplinary programs led by awarding winning faculty, then HNFAS is for you.

Mahalo, Jim! Dr. James R. Carpenter, Associate Animal Scientist and Animal Nutritionist retired from the Department on December 31, 2009. Dr. Carpenter's long tenure with first the Department of Animal Sciences and then the merged Department of Human Nutrition, Food and Animal Sciences has been of great benefit to Hawaii's livestock farmers and ranchers, other stakeholders and perhaps, most importantly, our students. Dr. Carpenter has long valued both undergraduate and graduate education. As an instructor, Dr. Carpenter, has won both the National Association of College Teachers of Agriculture and the UH Regents Medal for Excellence in Teaching. Dr. Carpenter's long research career has been devoted to ruminant nutrition, especially evaluation of Hawaii forages and plant by-products for ruminant feedstuffs. More recently, Dr. Carpenter has lent his expertise to the Alaska Sealife Center, helping understand the nutrition of endangered marine mammals. Besides Jim's illustrious academic career, he is also a retired Brigadier General in the Hawaii Army National Guard. Jim and Jeanne are relocating back to Hilo, where Jim will continue some of his research at CTAHR's Komohana Ag Complex when he's not traveling and visiting his grandchildren.
Chef Mark Segobiano offers several one-day culinary enthusiast classes in the Spring Semester from 10:00 am - 2:00 pm on Saturdays. You can learn more about the classes by visiting the Outreach College website.
Dr. Charles Weems of HNFAS was named the 2010 Recipient of the CTAHR Ka Pouhana (Mentor) Award for his advising of the UH-Manoa Rotaract Club. The Ka Pouhana (Mentor) Award, which recognizes an outstanding mentor in our college whom students feel has gone beyond the call of duty and has performed an outstanding job in guiding them. Congratulations to Dr. Weems and to the Rotaract Students.

CE event on Functional Foods – Agriculture & Clinical Applications to be held on Saturday Jan 23, 2010 from 0900 – 2:30. This conference is for agricultural, food and health professionals with an interest in food and nutrition. The conference will highlight some of the research and extension work occurring in various agriculture and clinical nutrition areas relating to functional foods.
