RESOURCES - Recipes

These recipes all orginally came from EFNEP Program staff in each of the islands and represent dishes eaten and promoted in the island EFNEP programs. The focus is on canned foods because these are often the foods more familiar to recent migrants.

While testing and analyzing the original recipes, some were found to be high in fat and sodium. Minor modifications were made to make sure they met 'healthier' guidelines:

  • Recipes should be between 100-400 calories per serving. Less than 250 calories is preferred
  • Total fat content 10g or less per serving
  • Total fat content 15% DV or less per serving
  • Total sodium content of less than 600g per serving
  • Total sodium content 25% DV or less per serving
